- 4 artichokes
- 1 untreated lemon
- 6 tbsp Olive oil
- 2 tbsp white wine vinegar
- Salt
- Pepper (freshly ground)
- 2 Garlic cloves
- 2 tsp chopped parsley

Trim the tips and stems of the artichokes. Rub the cut surfaces with a lemon half immediately to prevent darkening. Cook the artichokes in a large pot of boiling water with a lemon half for about 30 minutes, simmering gently until the leaves can be pulled apart easily.

Whisk together oil, vinegar, salt, and pepper; peel and press the garlic into the mixture, then stir in parsley and taste. Drain the artichokes well, arrange on plates, and serve with the vinaigrette.
