Artichoke with Mustard Sauce

Ingredients

  • 4 artichokes
  • 0.5 lemon (juice)
  • 6 tbsp Olive oil
  • 2 tbsp white wine vinegar
  • 2 tsp Dijon mustard
  • 1 Garlic clove
  • Sea salt
  • white pepper (ground)

Instructions

    Wash the artichokes. Place them side by side in a wide pot, fill halfway with water and add lemon juice. Cover and cook over medium heat for 25–30 minutes until the leaves can be easily pulled off.

    Peel the garlic, finely chop it and grate it with 2 pinches of sea salt. Mix vinegar, mustard, garlic, and pepper into a dressing; whisk the oil into the mixture. Season the vinaigrette to taste.

    Drain the artichokes well, arrange them on plates, and serve with the vinaigrette.
