Möhren-Käseauflauf

Ingredients
- 800 g carrots
- 60 g Butter
- 30 g flour
- Salt
- 400 ml milk
- Pepper (freshly ground)
- 0.5 tsp orange zest (unprocessed)
- Nutmeg (freshly grated)
- 80 g shredded Gouda cheese
- 80 g shredded hard goat cheese
- 40 g white bread crumbs
- 30 g shredded almond kernels
- butter (for the dish pan)
- 1 tbsp freshly chopped parsley
Instructions

Preheat the oven to 180°C with upper and lower heat.

Clean, peel, halve the carrots and cut them into sticks about 4 cm long.

In a small pot melt 2 tbsp butter and sprinkle flour over it. Stir with a wooden spoon until lightly browned. Deglaze with milk and whisk well to avoid lumps. Season with salt, pepper, orange zest and nutmeg. Simmer gently for about 5 minutes until thickened. Mix the two cheeses together. Remove the sauce base from the pan and sprinkle half of the shredded cheese on top.

Melt the remaining butter in another pan, brown the crumbs and almonds until golden yellow and lightly salt them. Place the carrots in a greased baking dish and pour the sauce over them. Sprinkle with almond crumbs and spread the remaining cheese on top. Bake in the preheated oven for 20-25 minutes. Before serving sprinkle with parsley.
