Ingredients
- 1.5 kg potatoes (cooked in skin)
- 5 eggs (hard-boiled and finely mashed with a fork)
- 3 tbsp olive oil
- 1 tsp Mustard
- 125 ml yogurt
- 125 ml sour cream
- 2 tbsp lemon juice
- 1 Garlic clove
- 1 pickled cucumber (finely chopped)
- 1 shallot (finely chopped)
- 1 tsp sugar
- Salt
- ground pepper
- 1 tbsp chives
- 1 Tbsp parsley
- 1 tbsp watercress
- 1 tbsp tarragon
- 1 tbsp borage
- 1 tbsp sorrel
- 1 tbsp pimpinelle
- 1 tbsp basil
- 1 tbsp dill
- 1 tbsp estragon
- 1 tbsp lemon balm
- 1 tbsp lovage (all finely chopped)

Whisk eggs with oil, stir in lemon juice, yogurt and mustard, add herbs, shallot, cucumber and pressed garlic, season with salt, sugar and pepper, fold in sour cream, taste.

Peel potatoes and serve the boiled potatoes with the green sauce.
