Ingredients

  • 8 medium, waxy potatoes
  • olive oil (for brushing)
  • 1 bunch Basil
  • 1 peeled garlic clove
  • 2 tbsp toasted pine nuts
  • 3 tbsp freshly grated Parmesan
  • 60 ml olive oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Preheat the oven to 200°C (392°F) with upper and lower heat. Peel and wash the potatoes. Cut each potato crosswise into 5-6 slices, but do not cut all the way through. Wrap each slice individually in a lightly oiled piece of foil and bake in the preheated oven for about 40 minutes.

    Use a knife tip to test doneness. Wash, dry, and shake off the basil leaves. Blend the basil with the crushed garlic, pine nuts, and olive oil using an immersion blender, then stir in the Parmesan. Season with salt and pepper.

    Remove the potatoes from the foil and let them cool slightly. Spoon pesto into the potato slits. Place the potatoes in a greased baking dish and bake for another 8-10 minutes until golden and gratinated.
