Ingredients
- 300 g mixed salad mix (Batavia lettuce, radicchio, Eichblatt, Lollo Rosso, frisée, etc.)
- 100 g blue grapes
- 100 g light grapes
- 1 pear
- 3 tbsp chopped walnut kernels
- 80 g Parmesan
- 1 tbsp Apple cider vinegar
- 1 tsp raspberry vinegar
- 0.5 tsp mustard
- 2 tsp apple syrup
- 2 tbsp olive oil
- 1 tbsp walnut oil
- Salt
- Pepper (freshly ground)
Instructions

Wash, rinse, dry and tear salad leaves into bite‑sized pieces. Wash the pear, peel if desired, and cut into thin slices. Wash grapes, rinse, and slice in half.

Whisk vinegar with mustard, apple syrup, salt and pepper; beat oils together with a whisk until emulsified, then taste and adjust seasoning.

Combine salad, grape halves and pear slices with the dressing, arrange on plates, sprinkle walnuts on top. Shave parmesan over the salad with a microplane or truffle grater and serve immediately.
