Ingredients

  • 200 g spinach (fresh)
  • 250 g Cherry Tomatoes
  • 100 g princess beans
  • 300 g Mushrooms
  • Salt
  • Pepper
  • 2 tbsp white wine vinegar
  • 2 tbsp clarified butter
  • 50 g parmesan (thin slices)

Instructions

    Wash the spinach, rinse and shake dry. Wash the tomatoes and halve them. Trim the beans and cut into pieces; boil in plenty of salted water for 8-12 minutes until al dente, then drain and shock with ice-cold water.

    Rub the mushrooms with kitchen paper and fry in clarified butter until golden brown all around. Mix the spinach with the tomatoes, beans, and mushrooms; season with salt, pepper, and vinegar. Plate and sprinkle with parmesan before serving.
