  • 4 beef tomatoes
  • 2 tbsp mint
  • olive oil
  • Salt

  • 150 g whole milk yogurt

    Slice eggplants crosswise into rounds and soak in salted water for 20 minutes, then drain and pat dry. Heat oil in a pan and fry the eggplant slices until golden brown on both sides; blot excess oil on paper towels. Season with salt and pepper. Wash tomatoes: slice two beef tomatoes crosswise, season them, and halve the remaining ones, removing seeds and stems before dicing. Salt the tomato cubes, add 1 tbsp oil, press in garlic, stir, and let rest. Mix yogurt with salt, pepper, and mint. Assemble by placing a tomato slice on an eggplant round, topping with a teaspoon of mint yogurt, then covering with another eggplant slice. Arrange tomato cubes with eggplants on a plate, drizzle the remaining dressing, and serve as an appetizer.
