Ingredients
- 300 g mixed green leafy salad (e.g., chicory, field lettuce, Lollo Bionda…)
- 4 tomatoes
- 125 g cooked ham (thin slices, no fat edge)
- 4 hard‑boiled eggs
- 150 g spicy Gouda cheese
- 50 g coarsely chopped walnut kernels
- 50 ml olive oil
- 2 tbsp mustard
- 1 pinch sugar
- 2 tbsp white wine vinegar
- 2 tbsp mayonnaise
- Salt
- black pepper (freshly ground)
Instructions

Separate the salad into leaves, wash, clean, and pat dry; tear into bite‑size pieces as needed.

Wash the tomatoes and cut them into eighths.

Peel the eggs and quarter them lengthwise.

Dice the cheese into small cubes.

If desired, tear the ham into small pieces.

For the salad dressing whisk mustard with 2 tbsp water, sugar, vinegar, mayonnaise, salt, and pepper; gradually fold in the oil using a whisk until emulsified and adjust seasoning.

Arrange the salad ingredients decoratively on four plates and drizzle with the dressing before serving.
