Tomato-Olive Salad

Try the delicious tomato-olive salad from Spoonsparrow!

Ingredients

  • 1 kg tomatoes
  • 2 shallots
  • 2 Garlic cloves
  • 60 g black olives (pitted)
  • 1 tbsp capers
  • 4 tbsp white balsamic vinegar
  • a pinch of sugar
  • 6 tbsp Olive oil
  • 2 tbsp freshly chopped parsley
  • Salt
  • pepper (ground)
  • 1 tsp paprika powder

Instructions

    Wash the tomatoes, cut off the stem ends and slice them. Peel the shallots and garlic and finely dice both.

    Slice the olives. Mix the capers with the balsamic vinegar, sugar, olive oil and parsley; then combine with the remaining salad ingredients. Season with salt, pepper and paprika and serve.
