Ingredients
- 200 g mixed salad (head lettuce, oakleaf lettuce, batavia lettuce, arugula, dandelion, etc.)
- 0.5 bunch mixed herbs (mint, lemon balm, coriander, basil, etc.)
- 2 red bell peppers
- 2 ripe tomatoes
- 6 dates (dried, pitted)
- 1 apple
- 4 tbsp white balsamic vinegar
- 4 tbsp olive oil
- 1 tsp sharp mustard
- 1 tsp Honey
- Salt
- Pepper (freshly ground)
- 3 tbsp vegetable broth
- 50 g roasted pine nuts (for sprinkling)
Instructions

Wash the salads, rinse, shake dry and tear into bite‑sized pieces. Wash the herbs, shake dry and pluck from stems. Wash the peppers, halve, pit, remove membranes and dice.

Wash the tomatoes, halve, pit, remove stem ends and dice. Quarter the dates, peel, core the apple and dice it, then drizzle with a little vinegar.

Combine all dressing ingredients in a bowl, mix well, pour over the salad components, toss thoroughly, plate, sprinkle with pine nuts and serve immediately.
