Mirabelle Pancakes with Pistachios

Ingredients
- 400 g fresh ripe mirabelles
- 200 g Flour
- 0.5 tsp cardamom powder
- 1 tsp Baking powder
- 0.5 tsp Salt
- 3 eggs
- 400 ml milk
- 40 g butter (for frying)
- 200 g plain yogurt
- 3 tbsp liquid honey
- mint
- powdered sugar
- 2 tbsp chopped pistachio nuts

Wash, halve and pit the mirabelles. In a bowl combine flour, cardamom, baking powder, and salt. Separate the eggs; whisk together yolks and milk with the dry ingredients until smooth. Let rest for about 20 minutes.

Preheat the oven to 70 °C (350 °F) on both top and bottom heat. Whisk the egg whites to stiff peaks and fold them into the batter.

Heat a little butter in a pan, pour in a quarter of the batter, and spread some mirabelles on top. Cook each pancake over medium heat until golden brown on both sides; repeat with the remaining batter and keep finished pancakes warm in the preheated oven.

For serving whisk yogurt with honey, spoon onto the pancakes, and scatter the remaining mirabelles on top. Garnish with mint leaves, powdered sugar, and pistachios before serving.
