Plum Dumplings with Poppy Seed Sauce

Ingredients
- 750 g potatoes (starchy)
- 100 g flour
- 1 pinch salt
- 2 Eggs
- 1 kg plums
- cube sugar (for the plums)
- 80 g Butter
- 100 g ground poppy seeds
- 0.5 tsp cinnamon
- 2 tbsp sugar
- powdered sugar (for dusting)

Cook the potatoes as whole boiled potatoes, peel them quickly while hot, press through a sieve, spread out to steam off and let cool.

Meanwhile wash the plums, core them and fill each with a cube of sugar.

Bring lightly salted water to a boil in a wide pot.

Sift about two-thirds of the flour and salt together. Whisk the eggs, mix in with a fork, then quickly combine everything into a dough. If needed, fold in the remaining flour. Shape the dough into a log, cut slices so each can wrap a plum thinly.

Wrap the plums in the thin dough layer, shape them, and let them simmer gently in boiling salted water for about 5 minutes.

While the dumplings cook, melt butter in a pan. Add poppy seeds, cinnamon and sugar, warm briefly over medium heat.

Lift the dumplings with a slotted spoon, serve dusted with powdered sugar and topped with the poppy seed mixture.
