Ingredients
- butter (for the molds)
- 125 g dark chocolate (60–70% cocoa content)
- 125 g butter (+2 tbsp for the molds)
- 2 Eggs
- 3 egg yolks
- 60 g sugar
- Salt
- 25 g spelt flour

Line six porcelain soufflé cups with melted butter and set aside. Finely chop the chocolate and melt it together with the butter in a bowl over a bain‑marie. Beat the eggs, yolks, sugar and a pinch of salt until creamy for 8–10 minutes.

Gradually fold in the chocolate‑butter mixture. Sift in the spelt flour and mix gently. Pour the batter into the prepared cups and refrigerate overnight.
