Cherry Ice Cream Cake

- 50 g butter
- 3 tbsp maple syrup
- 175 g shortbread cookies
- 500 g strawberry ice cream (ready-made)
- 500 g vanilla ice cream (ready-made)
- 400 g cherry jam

Warm the butter and syrup until the butter melts. Place the cookies in a freezer bag and crush them with a rolling pin. Mix the crumbs with the butter-syrup mixture and spread it on the bottom of a springform pan, pressing it down slightly. Chill the pan for about 30 minutes.

Let the ice cream soften a bit, then spread the strawberry ice cream over the cookie base and smooth it out, followed by the vanilla ice cream. Place the cake in the freezer for 2 hours to set firmly.

Spread the cherry jam over the frozen ice cream and return it to the freezer.

If desired, chill in the refrigerator for 30 minutes before serving so the ice cream softens slightly.

Spoon the mixture onto the center of the cake surface, spread evenly, re-chill until cold, and serve well chilled.
