Mini Savory Puff Pastry Bites
Mini puff pastry bites filled with Spoonsparrow are a delightful starter for a festive vegetarian menu.
Ingredients
- 15 g Butter (1 tbsp)
- Salt
- 50 g spelt flour type 630
- 1 egg
- 1 tsp Weinstein baking powder
- 1 tbsp rye whole grain groats
- 120 g goat fresh cheese (30% fat)
- 1 tsp liquid honey
- 1 tsp Pink peppercorns
- 1 orange
- 1 lemon
- 2 tbsp olive oil
- Pepper
- 380 g large chicory (2 large chicories)
- 40 g red lamb's lettuce
Instructions

Boil butter with 70 ml water. Remove from heat, add a pinch of salt and all the spelt flour at once, stirring immediately with a wooden spoon.

Return to heat and stir until a dough ball forms.

Transfer the dough ball to a mixing bowl, add the egg, and mix in with a hand mixer’s whisk. Sprinkle baking powder over it and fold briefly.

Place rye groats on a plate. Shape 16 small balls from the dough using two cold teaspoons, then roll each in the rye groats.

Line a baking sheet with parchment paper, arrange the dough balls on it, and bake in a preheated oven at 200 °C (180 °C fan, gas mark 3) for about 15 minutes. Let cool.

Meanwhile whisk goat fresh cheese and honey together with a whisk.

Crush half of the pink peppercorns in a mortar and stir into the cheese mixture with 1 tbsp cold water. Season with salt and refrigerate.

Halve the orange and lemon, squeeze out the juice. Whisk 4 tbsp orange juice with 1–2 tsp lemon juice and olive oil to make a vinaigrette. Season with salt and pepper.

Wash, trim, and drain chicory and lamb's lettuce. Cut chicory in half, remove the stem, and slice leaves into thin strips.

Toss lamb's lettuce with chicory in a salad bowl. Fold in the orange vinaigrette.

Cut cooled puff pastry bites open with kitchen scissors and fill with the cheese cream. Serve each bite on a plate with a portion of salad, sprinkle remaining peppercorns, and enjoy the savory puff pastry bites.
