  • 500 g red cabbage
  • 100 ml red currant juice
  • 3 tbsp white wine vinegar
  • Salt
  • Pepper
  • 2 tsp sugar
  • 5 tbsp oil
  • 30 g Raisins
  • 4 Spring Onions
  • 30 g hazelnut kernels

    Quarter the cabbage, remove the core and finely shred or slice into thin strips. Whisk the currant juice with vinegar, salt, pepper, and sugar; stir in the oil and mix in the raisins. Toss the cabbage with the dressing in a bowl for 5 minutes.

    Trim the spring onions and cut them diagonally into thin slices. Roughly chop the hazelnut kernels. Fold both into the raw vegetables and let rest for another 15 minutes before serving, adjusting seasoning if desired.
