Mini Muesli Pancakes with Blueberries

- 500 ml Buttermilk
- 2 Eggs
- 100 g fruit muesli
- 200 g Flour
- Salt
- 1 tbsp sugar
- 2 tsp Baking powder
- 200 g Sour Cream
- 5 tbsp liquid butter
- 2 tbsp oil
- 250 g blueberries
- 1 Banana
- 100 g Schmand
- butter (for serving)
- maple syrup (for serving)

Preheat the oven to 50°C fan. Whisk 400 ml buttermilk with the eggs. In a bowl combine the muesli, flour, salt, sugar and baking powder. Gradually stir in the buttermilk, sour cream and liquid butter into the dry mix and let the batter rest for about 20 minutes.

Heat oil in a non‑stick pan and cook small pancakes from the batter in portions. Warm finished pancakes in the preheated oven. Wash and pat blueberries dry. Peel the banana, mash with a fork, then mix with remaining buttermilk and Schmand and fold in the berries. Plate the pancakes topped with berry‑Schmand. Optionally add butter and drizzle maple syrup before serving.
