Berliner Pancakes

Ingredients
- 500 g flour
- 30 g yeast
- 250 ml lukewarm milk
- 50 g sugar
- Salt
- 3 egg yolks
- 100 g Soft Butter
- flour (for rolling)
- 0.5 neutral plant oil
- 150 g jam (for filling)
- 1 tbsp Lemon Juice
- 150 g sugar

Add flour to a bowl, press a well in the center. Crumble yeast, stir with a little milk and 1 tsp sugar. Pour into the well, dust with flour. Cover and let rise in a warm place. Mix the starter with a bit of flour. Add remaining milk, sugar, salt, egg yolks and butter pieces, knead into a smooth dough. Cover and double in size.

Roll dough on floured surface to 2 cm thickness. Cut out circles (5 cm diameter) with a cutter. Place on a floured kitchen towel and let rise for 20 minutes.

Fill a large pot 1.5 cm high with oil, heat until hot (bubbles appear when a spoon stick is inserted). Fry the first batch in medium heat until golden brown, turning once. Remove pancakes with a slotted spoon, drain on paper towels. Refill oil to 1.5 cm height, heat and continue until all are cooked.

Whisk jam with lemon juice, fill a piping bag with a long tip or pastry bag. Pipe jam into the center of each pancake while still warm. Roll in sugar. Arrange on a platter.
