Mini Florentiner
Mini-Florentiner by Spoonsparrow: The Christmas cookies are super crisp, easy to make, and perfect for gifting!
Ingredients
- 75 g candied orange peel
- 75 g red cocktail cherries
- 50 g Raisins
- 75 g honey
- 100 g butter
- 150 g whipping cream
- 175 g sugar
- 200 g sliced almonds
- 150 g dark chocolate couverture
- 2 tsp butter

Finely chop the candied orange peel and cherries; if desired, also finely chop the raisins. In a saucepan, combine honey, butter, whipping cream, and sugar, stirring over medium heat for about 5 minutes until it simmers. Add the sliced almonds and simmer for another 5 minutes, then add the dried fruit. Let cool slightly.

Line a baking sheet with parchment paper. Using two teaspoons, form small mounds on the prepared sheet, flatten them slightly, and bake in a preheated oven at 200 °C (180 °C fan, gas: level 3) for 10–12 minutes. Remove the Mini Florentiner cookies and let cool.

Melt the chocolate couverture with butter over a double boiler. Dip or brush the underside of each cookie with the melted chocolate; optionally use a fork to create waves in the soft coating. Place on parchment paper or butter paper to set.
