Minced Meat Filled Cabbage Rolls

- 8 large white cabbage leaves
- Salt
- 1 old-fashioned roll
- 400 g mixed ground meat
- 1 egg
- 1 tsp medium-hot mustard
- pepper (ground)
- 20 g clarified butter
- 2 onions
- 1 tsp tomato paste
- 350 ml vegetable broth

Preheat the oven to 180°C (356°F) with upper and lower heat. Cut off the thick edges of the cabbage leaves, blanch them in boiling salted water for 2 minutes, then cool under cold running water and pat dry. Soak the roll in lukewarm water. Mix the ground meat with the egg, mustard and well‑drained roll, season with salt and pepper.

Spread two cabbage leaves on top of each other, leaving a half overlap, and place a small amount of the minced meat mixture in the center of each. Fold the leaf edges toward the middle and roll into parcels. Tie with kitchen twine and brown the rolls all around in a hot pan with melted clarified butter until golden brown.

Add sliced onions to the rolls, sauté briefly, stir in tomato paste, pour in broth, cover tightly and simmer in the preheated oven for 45–50 minutes. Serve on plates with sauce and optional boiled potatoes if desired.
