Pan‑fried Chicken with Almond Broccoli

Try pan‑fried chicken with almond broccoli!

Ingredients

  • 500 g broccoli florets
  • Salt
  • 2 sprigs Rosemary
  • 2 stems sage
  • 560 g chicken breast fillets (4 fillets)
  • Pepper
  • 2 tbsp olive oil
  • 10 g butter (2 tsp)
  • 2 tbsp lemon juice
  • 1 Garlic clove
  • 20 g chopped almonds (2 tbsp)

Instructions

    Wash broccoli florets and cook in boiling salted water for about 4 minutes until al dente. Drain, rinse with cold water, and let drain.

    Meanwhile wash herbs, pat dry, and chop.

    Rinse chicken fillets under cold water, pat dry, slice horizontally, and separate. Season with salt and pepper.

    Heat oil in a pan. Cook chicken fillets over medium heat for 2–3 minutes on each side. Remove from heat, stir in 1 tsp butter and herbs, and let rest for a few minutes. Season with salt, pepper, and lemon juice.

    Meanwhile peel and finely chop garlic. Heat remaining butter in another pan. Sauté garlic and almonds over medium heat until golden brown. Add broccoli, season with salt and pepper, and combine with chicken fillets on four plates.
