Ingredients

  • 3 eggs
  • 150 g raw sugar
  • 1 Tbsp vanilla sugar
  • 125 g flour
  • 3 tsp baking powder
  • a pinch salt
  • a pinch ground cloves
  • a pinch nutmeg
  • a pinch cardamom
  • a pinch ginger
  • 1 untreated orange (zest)
  • 50 g chopped almonds
  • 100 g chopped walnuts
  • 100 g figs
  • 100 g dates
  • 50 g finely chopped lemon zest
  • 50 g finely chopped orange zest
  • 50 g Raisins
  • 40 g chopped candied cherries
  • flour (for dusting)
  • butter (for the pan)
  • 20 g ground hazelnuts (for sprinkling)
  • 400 g marzipan sheet
  • 300 g white fondant
  • gold leaf (and silver for decoration)

Instructions

    Beat the eggs with the sugar until fluffy. Mix the flour with baking powder, spices, and orange zest, then gradually fold into the egg mixture. Stir in almonds and chopped walnuts. Dice figs and dates. Combine with lemon zest, orange zest, raisins, and cherries. Lightly dust everything with flour and incorporate into the batter.

    Grease the baking molds and sprinkle them with ground hazelnuts.

    Preheat the oven to 160°C (320°F) fan‑forced. Pour the dough into the prepared molds and bake on the middle rack for about 35 minutes. Let cool, then release from the molds.

    Roll out four marzipan circles of approximately 15 cm diameter and place them over the cakes. Brush with a little water. Cut fondant to cake size and lay it on top. Brush again with water and affix gold and silver leaf decorations.
