Apple Cookies

Ingredients
- 60 g raisins
- 2 tbsp rum
- 0.5 lemon (juice)
- 1 tart apple
- 120 g softened butter
- 100 g sugar
- 1 tsp cinnamon powder
- a pinch of salt
- 1 egg
- 120 g flour
- 40 g ground almonds (peeled)
Instructions

Warm the raisins with rum and lemon juice in a small pot, transfer to a bowl and let sit. Peel the apple, quarter it, remove the core, finely dice the quarters, and mix into the raisins.

Beat the butter with sugar, cinnamon, and salt until creamy. Add the egg and stir. Fold in the flour mixed with almonds. Thoroughly fold the apple-rasp mixture into the dough.

Preheat the oven to 180°C fan-forced. Line a baking sheet with parchment paper.

Scoop portions of dough with a teaspoon onto the sheet, spacing them apart. Bake for about 15 minutes until lightly golden.

Remove from the oven, let cool briefly, then carefully lift off the sheet and cool on a wire rack.
