Chocolate Stars

Chocolate stars from Spoonsparrow bring variety to the cookie plate.

Ingredients

  • 180 g wheat flour type 1050
  • 40 g cocoa powder (strongly defatted)
  • 0.5 tsp cinnamon
  • 1 pinch ground cloves
  • 1 pinch ground allspice
  • 0.5 tsp ground vanilla
  • 75 g ground almonds
  • 60 g whole cane sugar
  • 160 g soft butter
  • 1 egg
  • 1 tbsp espresso (fresh brewed, cooled)

Instructions

    Mix flour, cocoa, cinnamon, cloves, allspice, vanilla, almonds and sugar. Press a shallow well in the center. Add butter in chunks, egg and espresso and quickly knead into a shortcrust dough. Wrap in cling film or a damp kitchen towel and chill for about 1 hour.

    Roll dough between cling film to 1 cm thickness, remove film and cut out star shapes. Place stars on parchment-lined baking sheet and bake in preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 10–12 minutes. Remove and cool on a wire rack.
