Millet with Dried Fruits and Nuts

Ingredients

  • 375 g millet
  • 600 ml milk (3.5 % fat)
  • 100 g mixed unsweetened dried fruit (e.g., cranberries, apricots)
  • 200 ml apple juice (lukewarm)
  • 100 g mixed nuts (e.g., walnuts, hazelnuts, almonds)
  • 4 tbsp liquid honey
  • 0.5 tsp vanilla powder

Instructions

    Rinse millet in a sieve until water runs clear and drain.

    Bring milk to a boil in a pot, add millet, and simmer while stirring for 10–15 minutes until it absorbs the liquid.

    Meanwhile, soak dried fruit in apple juice.

    Toast nuts in a dry pan without oil until fragrant; add honey and lightly caramelize.

    Fluff millet with a fork, stir in vanilla powder, remove dried fruit from juice, and mix into millet with nuts.
