Melon Soup with Papaya and Beef Fillet

Ingredients
- 80 g beef fillet
- Salt
- Pepper (freshly ground)
- 20 ml soy sauce
- 2 ripe papayas
- 2 ripe cantaloupes
- 1 tsp sugar
- 1 pinch chili powder
- 800 ml poultry broth
- Tabasco
- 2 tsp black sesame seeds

Slice the meat into 8 pieces, season with salt, pepper and soy sauce, and let it marinate for a few minutes.

Halve the papaya and cantaloupe, remove seeds, separate flesh, and cut into small cubes. Set aside some for garnish as desired.

Heat sugar with 2 tbsp water in a pot until lightly caramelized brown. Add fruit flesh, sprinkle chili powder, pour in broth, bring to boil, simmer for 5 minutes, then puree finely. If needed, add hot water and season with salt and a few drops of Tabasco for intensity.

Serve the soup in pre-warmed bowls or plates, top with marinated beef slices and reserved fruit cubes. Sprinkle with black sesame seeds before serving.
