Kefir Soup with Radish

Ingredients

  • 1 bunch spring onions
  • 2 cloves garlic
  • 0.5 cucumber
  • 500 g Kefir
  • 400 ml Vegetable broth
  • 2 Eggs
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp Olive Oil
  • 100 g radish
  • Basil

Instructions

    Clean, wash and finely chop the spring onions.

    Peel and finely chop the garlic.

  3. 3.

    Wash, peel, halve, deseed and dice the cucumber.

  4. 4.

    Whisk kefir, broth and eggs in a pot, heat gently while stirring constantly with a whisk; do not boil. Season the heated soup with salt and pepper, stirring vigorously occasionally until serving time.

    Shave the radish into very thin slices.

    Heat oil in a pan, sauté the spring onions for about 3 minutes while stirring, add garlic and cucumber cubes and cook briefly, season with salt and pepper, then pour into the soup and blend quickly. Serve on plates, garnish with radish slices and basil.
