Cherry Soup with Quark Balls

Ingredients

  • 300 g quark
  • 40 g grated almond kernels
  • 3 tbsp crème double
  • 2 tbsp sugar
  • 1 tsp grated lemon zest
  • 300 g sour cherries (pitted, separated by variety)
  • 300 g sweet cherries (pitted, separated by variety)
  • 500 ml peach juice
  • 40 g sago
  • 1 packet vanilla sugar

Instructions

    Whisk quark with almonds, crème double, sugar and lemon zest.

    Bring peach juice to a boil with the sago and simmer for about 5 minutes; then stir in the sour cherries and simmer another 5 minutes. Finally mix in the sweet cherries with the vanilla sugar, chill.

    Arrange the cold soup in dessert bowls, use a small spoon to scoop tiny balls from the quark mixture and distribute them over the bowls.
