Ingredients

  • 500 peaches
  • 1 tbsp sugar
  • 50 ml peach nectar
  • juice of 1 lemon
  • 1 piece fresh ginger (about 3 cm, grated)
  • 150 ml white wine
  • 300 ml orange juice
  • 200 ml milk
  • vanilla pods
  • 65 g wheat semolina
  • 1 egg
  • 1 tbsp honey
  • 200 g Blueberries
  • mint (for garnish)

Instructions

    Steep peaches in boiling water, shock in ice water and peel. Cut one peach for garnish into wedges, dice the others. Add peach cubes with sugar, peach nectar, lemon juice, ginger, and white wine to a pot and bring to a boil.

    Blend the fruit mixture with an immersion blender, stir in orange juice, and let cool. For the semolina dumplings, bring milk, vanilla essence, and semolina to a boil in a small pot. Stir in egg and honey, then cool. Bring heavily salted water to a boil in another pot.

    Using two teaspoons, scoop out lumps from the semolina mixture and drop them into the gently boiling water; cook until they rise to the surface. Reserve blueberries. Arrange the peach cold soup with blueberries, remaining peach wedges, semolina dumplings, and mint in bowls.
