Ingredients
- 1 Lime
- 200 g sugar
- 200 ml water
- 100 ml dry sparkling wine
- 1 cantaloupe
- Lemon balm
- Watermelon (with scooped melon balls)
- Net melon (with scooped melon balls)
- 3 small halved melons
Instructions

Wash, peel and juice the lime.

Add sugar, lime zest and juice, and water to a pot; bring to a boil while stirring and simmer for about 3 minutes. Strain and top with sparkling wine.

Cut the cantaloupe through, remove seeds and peel. Chop the flesh, puree finely, and mix with the sugar syrup.

Pour everything into a metal bowl and place in the freezer for about 6 hours. After an hour stir well with a whisk; continue freezing but stir again every half hour!

Serve the sorbet as desired in chilled melon halves with some also chilled melon balls, garnished with lemon balm.
