Ingredients

  • 100 ml Vegetable broth
  • 1 tsp mustard seeds
  • 1 tsp sharp mustard
  • 1 tbsp honey
  • 4 tbsp white wine vinegar
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • 1 cantaloupe melon
  • 125 g arugula
  • 200 g mozzarella
  • 100 g Serrano ham (thinly sliced)

Instructions

    Heat the broth for the dressing and add the mustard seeds. Simmer for about 2-3 minutes, then set aside to cool.

    Halve the melon, remove the seeds and use a melon baller to scoop out small balls of flesh. Wash, rinse, and shake dry the arugula, removing the tough stems. Drain the mozzarella and cut into cubes.

    Combine the cooled broth with sharp mustard, honey, vinegar, and oil in a shaker bottle and shake vigorously. Season with salt and pepper. Toss the melon balls with mozzarella and arugula, arrange on plates, drizzle the dressing over them, and garnish with ham.
