Ingredients
- 1 large romaine lettuce heart
- 80 g Arugula (1 bunch)
- 500 g watermelon
- 200 g Feta Cheese
- a handful of mint
- 2 tbsp cold‑pressed olive oil
- 2 tbsp Lime juice
- Salt
- Pepper

Clean, rinse, and dry the romaine lettuce. Wash, trim, and dry the arugula. Peel the watermelon, dice it, and crumble the feta. Rinse the mint, shake off excess water, and pluck the leaves.

Distribute the romaine and arugula on four plates along with the watermelon cubes and mint sprigs. Sprinkle the feta over the top. Whisk together 2 tbsp oil, lime juice, salt, and pepper to make a dressing; taste and drizzle it over the salad.
