Ingredients
- 800 g melon (e.g., cantaloupe; 1 melon)
- 20 g sliced almonds (1 tbsp)
- 1 bunch cilantro
- 1 small lime
- 4 tbsp liquid honey
- 300 g crumbly cream cheese
Instructions

Halve the melon with a large knife and seed it with a teaspoon.

Use a melon baller to scoop out small balls of flesh. Place in a bowl and chill.

Toast the sliced almonds in a dry pan until lightly browned, then let cool.

Meanwhile wash the cilantro, shake off excess water, pluck the leaves and add them with the almonds to a tall container. Blend finely with an immersion blender.

Halve the lime, squeeze out juice and stir 2 tbsp of juice with honey into the cilantro‑almond puree.

Arrange melon balls on top of the cream cheese. Drizzle some cilantro dip over them and serve the rest on the side.
