Quick Minestrone

The Quick Minestrone from Spoonsparrow is especially light and quick to make!

Ingredients

  • 1 small onion
  • 1 Garlic clove
  • 1 sprig thyme
  • 1 tsp Olive oil
  • 300 g frozen soup vegetables
  • 600 ml classic vegetable broth
  • 1 bay leaf
  • Salt
  • Pepper
  • 1 small tomato
  • 30 g arugula (0.5 bunch)

Instructions

    Peel the onion and garlic, then finely dice both.

  2. 2.

    Wash the thyme and shake off excess water.

  3. 3.

    Heat oil in a pot. Sauté onion, garlic, and thyme for 2 minutes while stirring.

    Add soup vegetables, broth, and bay leaf to the pot; season with salt and pepper. Bring everything to a boil, cover, and simmer on low heat for about 20 minutes.

    Meanwhile, wash the tomato, cut off the stem end in a wedge shape, and dice it.

    Wash arugula and shake dry. Remove thick stems and slice leaves into strips across their width.

    Add tomatoes and arugula to the minestrone; let them cook together for 2 minutes. Season soup with salt and pepper to taste.
