Radish Herb Cold Soup

Ingredients
- 250 ml buttermilk
- 3 tbsp Lemon juice
- 150 g Yogurt (1.5% fat)
- 100 ml milk (1.5% fat)
- 20 g horseradish cream (1 tbsp; jar)
- Salt
- Pepper
- nutmeg
- 200 g radishes (1 bunch)
- 40 g mixed herbs (e.g., parsley, mint, basil, chives; 2 bunches)
Instructions

Mix buttermilk and lemon juice with yogurt and milk. Add horseradish and blend. Season with salt, pepper, and freshly grated nutmeg.

Wash, trim, and finely slice or grate the radishes. Fold half of the grated radishes into the soup.

Divide the soup between two bowls. Wash, dry, shake, chop the herbs, and scatter them over the soup. Sprinkle remaining radishes on top and season each bowl with a pinch of freshly grated nutmeg.
