Ingredients
- 600 g watermelon flesh
- 2 tbsp white wine vinegar
- 2 tbsp lemon juice
- 1 tsp Honey
- 4 tbsp olive oil
- Sea salt
- Pepper
- 2 tbsp freshly chopped coriander leaves
- 150 g sheep cheese
Instructions

Cut the watermelon flesh into cubes. Whisk together the vinegar, lemon juice, 1–2 tbsp water, honey and oil. Season with sea salt and pepper.

Arrange the watermelon cubes on plates. Sprinkle the sheep cheese over them, drizzle the dressing on top, and serve.
