- 50 g sugar
- 50 ml hot water
- 800 g green melon flesh
- 2 limes

Dissolve the sugar in hot water, bring to a brief boil, then let cool. Roughly chop the melon flesh and place it in a blender. Wash and juice the limes. Add some cooled sugar syrup and lime juice. Blend the melon with the syrup and lime juice, then pour into an ice cream maker. Freeze the melon sorbet for about 30 minutes until ready.

Alternatively, pour the mixture into a shallow bowl and freeze for 4–5 hours. Every 20 minutes stir well with a fork to prevent large ice crystals from forming. Before serving, stir again thoroughly and serve in bowls.
