The Melon Daiquiri in the Galia melon from Spoonsparrow promises maximum refreshment on hot summer days!
Ingredients
- 4 Galia melons
- 50 ml lemon juice
- 50 ml sugarcane syrup
- 150 ml rum
- 1 glass crushed ice
- Soda water (to top up)
- 6 mint leaves

Wash the Galia melons and cut a lid off each in a zigzag pattern. Scrape out the seeds and hollow out a bit of fruit, leaving a 1–1.5 cm thick rim.

Combine the fruit flesh with sugarcane syrup, lemon juice, and rum in a blender and puree until smooth. Add ice and blend until creamy. Pour the daiquiri into the melon halves and top up with soda water. Slice the mint into very thin strips, stir them in, and serve.
