Ingredients
- 2 yellow sugar melons (ca. 700 g)
- 1 Shallot
- 1 tbsp butter
- 250 ml vegetable broth
- Salt
- Pepper (freshly ground)
- 1 tbsp Lemon Juice
- mint (for garnish)

Halve the melons and remove seeds; peel three halves, chop finely, and puree. Using a melon baller, scoop balls from the remaining half and cover them in the refrigerator. Peel and finely dice the shallot; sauté in hot butter until translucent, add broth, bring to a boil, then simmer gently for about 3 minutes. Stir the melon purée into the sauce and season with salt, pepper, and lemon juice. Cover and chill thoroughly in the fridge.
