Potato Salad with Herring and Red Beet

Ingredients
- 600 g firm potatoes
- 150 g red beet (pre-cooked and vacuum-packed)
- 1 onion
- 120 g pickled cucumbers
- 1 sour apple
- 100 g Sour cream
- 50 g yogurt
- 1 splash Lemon juice
- 1 pinch sugar
- Salt
- Pepper
- 4 pickled herring fillets
- 1 tbsp sour cream
- 1 tbsp freshly chopped parsley

Wash the potatoes and steam them for about 30 minutes. Let cool, peel, and slice into not-too-thin pieces. Dice the red beet small.

Peel the onion, halve it, and slice thinly. Drain the cucumbers and cut lengthwise into thin slices. Peel the apple, quarter it, remove the core, and grate. Combine all prepared ingredients in a bowl.

Whisk the sour cream with yogurt until smooth. Season with lemon juice, sugar, salt, and pepper, then mix with the prepared ingredients in a bowl.

Let sit for about 10 minutes, then taste again. Pat the herring fillets dry, roll them up, and arrange on the salad. Serve garnished with sour cream and chives rings.
