Ingredients

  • 4 small zucchini
  • 350 g small mushrooms
  • 500 g cherry tomatoes
  • 1 fennel bulb
  • 4 tbsp olive oil
  • Salt
  • black pepper (freshly ground)
  • 1 tsp dried thyme

    Wash and trim the zucchini. Slice lengthwise into halves, then cut each half into thick slices. Clean and halve the mushrooms. Wash the cherry tomatoes. Trim, wash, and slice the fennel into strips; separate individual layers of the fennel.

    Thread the zucchini, mushrooms, tomatoes, and fennel alternately onto wooden skewers. Brush with olive oil and season with salt, pepper, and thyme. Grill on a hot grill or in a non-stick grill pan for about 10 minutes total, turning frequently.
