Ingredients

  • 150 g sweet potatoes
  • 1-2 red onions
  • 375 g zucchini (1 zucchini)
  • 300 g 1-2 red bell peppers (0 1-2 red bell peppers)
  • 225 g carrots (2 carrots)
  • 3 sprigs thyme
  • 1-2 sprigs rosemary
  • 1-2 tbsp olive oil
  • 1 pot Knorr Bouillon (Pure Vegetable)
  • 150 g pasta (e.g., penne)
  • Salt
  • 200 g mascarpone
  • Basil

Instructions

    Peel sweet potatoes and onions. Cut them with the remaining vegetables into pieces. Wash herbs, pluck leaves or needles and chop.

    Sauté vegetables in hot olive oil. Stir in 300 ml hot water with Knorr Pure Vegetable Bouillon and add herbs to the vegetables. Cover and cook on low heat for about 15 minutes until al dente.

    Cook pasta in boiling salted water according to package instructions. Mix pasta with the vegetables, fold in mascarpone, and sprinkle with fresh basil leaves.
