Bratwurst with Vegetables

Ingredients
- 500 g waxy potatoes
- 1 onion
- 1 Garlic clove
- 1 eggplant
- 2 Zucchini
- 2 bell peppers (red and yellow)
- 2 tbsp olive oil
- Salt
- Pepper
- 200 g cocktail tomatoes
- 250 ml vegetable broth
- 4 bratwursts (as a snail shape)
- basil (for garnish)
Instructions

Preheat the oven to 200°C with fan and top heat.

Peel, wash, and dice the potatoes. Peel and finely dice the onion and garlic. Wash, trim, and dice the eggplant and zucchini. Wash, halve, trim, and dice the bell peppers. Place all vegetables in a baking tray, drizzle with olive oil, season with salt and pepper, and mix well. Roast in the oven for about 15 minutes.

Wash and quarter the tomatoes. Remove the tray from the oven, add the tomatoes, pour in the vegetable broth, switch to grill mode. Lay the bratwursts on top of the vegetables. Grill under the broiler for about 10 minutes until browned and cooked through, turning once during cooking.
