Ingredients

  • 800 g salmon fillet (4 salmon fillets)
  • 2 small zucchini
  • 2 carrots
  • 1 small leek stalk
  • 1 tsp mustard seeds
  • 3 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • clarified butter
  • 300 g cherry tomatoes

Instructions

    Preheat the oven to 180°C.

    Wash and trim the vegetables. Slice them lengthwise into fine julienne strips, blanch briefly in boiling salted water, then shock in cold water.

    Wrap the tomatoes in greased aluminum foil squares and bake for 20 minutes.

    Season the salmon fillets lightly with salt, then sear each side in clarified butter in a grill pan for 3-4 minutes. Toss the vegetable strips with olive oil, balsamic vinegar, mustard seeds, salt, and pepper to taste.

    Arrange the Mediterranean salmon with tomatoes and vegetable strips on plates. Serve with mashed potatoes.
