Ingredients

  • 400 g orecchiette pasta
  • Salt
  • 6 tbsp Olive oil
  • 150 g black olives (pitted)
  • 2 anchovy fillets
  • 1 tsp Capers
  • pepper (ground)
  • 150 g zucchini
  • 200 g Cherry tomatoes
  • 2 bell peppers (red and green)
  • 1 Shallot
  • 2 Garlic cloves
  • 1 tbsp Lemon Juice

Instructions

    Cook the pasta in plenty of boiling salted water until al dente. Drain, rinse with cold water, and let drain well. Stir in 1 tbsp olive oil. Pat the olives and anchovies dry, then blend them with capers and 5 tbsp oil in a blender until smooth. Season with pepper and adjust taste. Grate the zucchini coarsely after washing.

    Wash the tomatoes, pat dry, and chop into small pieces. Wash and dice the bell peppers. Peel and finely mince the shallot and garlic. Combine the pasta with all vegetables and olive paste in a large bowl. Season with lemon juice, olive oil, salt, and pepper. Serve on porcelain bowls.
