Herring Salad

Ingredients
- 3 eggs
- 0.5 tsp Salt
- 100 g flour
- 1 pinch baking powder
- 75 g apples
- 150 g Gouda cheese (medium aged)
- 50 g pickled cucumbers
- 200 g matjes herring
- 120 g mayonnaise
- 3 tbsp sour cream
- 1 tbsp Lemon Juice
- 60 g green beans (cooked)
- 2 shallots (finely diced)
- Salt
- Pepper
- 1 tsp mustard (medium spicy)
- lettuce leaves (for garnish)
- 0.5 bunch arugula (for garnish)
- 12 slices Italian salami
- oil (for frying)

Line a baking sheet with parchment paper. Preheat the oven to 175 °C. Separate the eggs. Beat the egg whites into stiff peaks. Whisk the yolks with salt and 1 tbsp warm water until frothy. Sift flour over and fold in. Fold in the beaten egg whites. Spread the batter onto the prepared baking sheet and bake at 175 °C for about 10 minutes. Remove, cool on a rack, peel off the parchment, and cut the still-warm sponge into four strips. Place each strip into a ring shape, press the adjoining edges together slightly, and secure the shape of the sponge rings by wrapping a strip of foil around them and twisting the ends. Let the sponge rings cool.

Heat oil and briefly fry the salami slices, then remove and drain on paper towels. Wash and dry the lettuce and arugula, set aside. Peel, core, and dice the apple into small cubes. Dice the cheese, cut the matjes into bite-sized pieces, and finely dice the pickles. Whisk mayonnaise with sour cream and mustard, stir in lemon juice, and season with salt and pepper. Mix in the shallot cubes, green beans, cheese, matjes, and apples. Cover and refrigerate the herring salad. To serve, fill each sponge ring with the herring salad and insert three fried salami slices at the edge. Garnish with lettuce leaves and arugula and serve promptly.
