Mediterranean Oven-Baked Cod
The Mediterranean oven-baked cod brings a seaside feel to the table.
Ingredients
- 400 g thick cod fillet
- Salt
- Pepper
- 2 tbsp lemon juice
- 250 g Cherry Tomatoes
- 80 g Black olives
- 1 onion
- 1 Garlic clove
- 150 ml Vegetable broth
- 1 tbsp White Wine Vinegar
- 2 tbsp olive oil
- 200 g large cooked potatoes (2 large cooked potatoes)
- 250 g Broccoli

Peel the onion, slice into strips and sauté in 1 tbsp olive oil until translucent. Peel and mince the garlic, add to the onions and cook briefly. Transfer the mixture with remaining olive oil to a baking dish. Wash and halve the tomatoes. Using a cookie cutter, cut small balls from the potatoes.

Wash the fish, pat dry, divide into portions, season with salt and pepper, drizzle with lemon juice. Place the fish in the baking dish, add the potatoes, tomatoes, and olives, pour in vegetable broth and white wine vinegar, cover, and bake in a preheated oven at 200 °C (180 °C fan or gas level 3) for about 20 minutes.

Meanwhile, cut the broccoli into florets and boil in salted water for 5 minutes. Remove and serve alongside the fish.
