Ingredients

  • 1 stale roll
  • 400 g ground lamb
  • 1 egg
  • 1 clove garlic
  • 1 tsp dried thyme
  • breadcrumbs
  • Salt
  • Pepper (freshly ground)
  • 1 onion
  • oil for frying
  • 4 rolls
  • a handful of leafy greens (e.g., arugula)
  • 50 g sun‑dried tomatoes in oil
  • 50 g pitted black olives
  • 50 g feta

Instructions

    Soak the stale roll in lukewarm water, squeeze out excess liquid and mix with ground lamb, egg, minced garlic and thyme. If needed add breadcrumbs until the mixture is firm enough to shape. Season with salt and pepper. Form four patties and fry in hot oil for about 2–3 minutes per side. Peel the onion and slice into strips; add to the pan with the burgers and brown.

    Halve the rolls and, if desired, toast them on a skillet on the cut side. Wash, trim and tear the greens. Chop the tomatoes and olives and crumble the feta. Place the patties on the rolls and top with tomatoes, olives, feta and greens. Add the onions and the roll tops, then serve.
