Falafel Sticks

The Falafel sticks are always delicious – whether as a side dish or a tasty snack in between.

Ingredients

  • 400 g chickpeas
  • 1 Garlic clove
  • 1 onion
  • 2 tbsp white bread crumbs
  • 1 tbsp freshly chopped parsley
  • 1 sprig coriander
  • olive oil
  • oil for baking
  • Salt
  • ground pepper
  • Cumin powder
  • coriander powder
  • parsley
  • 250 g yogurt
  • 3 tbsp tahini (sesame paste)
  • 1 tbsp honey
  • 0.5 tsp grated unprocessed orange zest
  • 0.5 tsp allspice
  • 0.5 tsp cinnamon

Instructions

    Soak chickpeas overnight in cold water, then drain. Peel and chop the onion and garlic, adding them to the chickpeas.

    Process everything through a meat grinder. Mix in chopped coriander, a splash of olive oil, parsley, and bread crumbs. Season with cumin, salt, pepper, and coriander powder. Shape into small balls or elongated croquettes and bake in hot fat, portion by portion, until golden brown. Remove, drain on kitchen paper, and keep warm.

    Serve the falafel sticks with yogurt dip.

    Whisk yogurt with tahini and honey, then stir in orange zest, allspice, and cinnamon, tasting as you go.
